or at a bed and breakfast or something but these are such obscure jobs how would I go about doing something like that.

Look into volunteer work on a ranch. I would suggest going to CO, WY, NM, TX, OK to work. Start with a youth group (if you are good with kids). You could also look into trail riding.. Estes Park, CO has a few companies that you can apply to. You can at least get in and search for other prospects. Otherwise, for the B&B, research touristy places. Aspen, Santa Fe, Taos, are all good places fairly close to you.
